I was diagnosed with Celiac Disease in May 2008, after years of symptoms. It was a gigantic change for me, as eating is one of my favorite past times. I immediately went through the stages of grief while coping with this change. Denial of the disease, which led to me reasoning with myself that just a little gluten won't hurt. Then anger, where I continually asked myself "WHY ME????" Then depression, woeing around my house and telling everyone I could that Celiac Disease is a death sentence. Finally after a couple months I came to terms with myself and reached the acceptance stage. This year I am living in Rouen, France. I plan to attempt to recreate the wonderful French cuisine sans gluten for all those Celiacs out there. I may just have to make another movie titled Julia and Katherine the celiac! I also will be doing a lot of traveling and will keep everyone on the know of where to go to eat gluten free! Bon Apetit!
